Basic Preparation Of Foods: Dairy Produce.

Eggs: Part Two

Poaching: boil 40mm water in a frying pan; add a teaspoon of salt and a teaspoon of vinegar. Crack egg into cup, inspect and tip into water. Turn down the heat. Gather the white around the unbroken yolk with a spoon and simmer for 3-4 mins. Lift out with a fish slice, drain and serve on hot buttered toast.

Scrambling: beat the eggs well; add salt, pepper to taste and a dash of milk. Melt enough butter to cover the bottom of a shallow pan. Fry the eggs slowly, stirring continuously. Cook in a basin floating in boiling water, if preferred. Serve when almost completely set, after about 5 mins.

Fried: Melt enough butter to easily cover the base of the shallow pan. Tip egg in gently and fold the whites around the yolks. When the white has set, baste the yolk to taste and remove whole with a draining spoon.

Baked: lightly grease an oven-proof dish and slide the eggs gently into it. Sprinkle with salt, pepper and butter to taste. Bake in a medium oven and serve in the same pan after the whites have set.

Omelettes: buy a pan and keep it solely for omelettes! The base should be smooth and clean. Allow two eggs per person; whip lightly and add salt and pepper to taste. Heat enough butter to cover the base of a shallow pan. When the butter is fairly hot, pour in the beaten eggs; as it sets, raise the handle and draw the set mixture up towards the handle, allowing the liquid egg to run down onto the hot pan. When all the liquid has set, tilt the pan back and roll the omelette up. Serve immediately on a warm plate. The omelette can be filled with almost anything, before being rolled up.

Pouring Custard: beat 2-3 eggs per 1 pint of milk lightly. Heat the milk and pour gradually over the eggs; add sugar and flavouring; cook in a double pan or jug and hot water until the required thickness has been reached. If it is not to be served immediately, pour a thin layer of water onto the top to prevent a skin forming.

Baked Custard: proceed as above and then pour the custard into a greased dish; sprinkle lightly with nutmeg and place dish in water to halfway up its sides. Bake at 350 F for 35-45 mins; test its solidity by inserting a knife – it should be clean on removal.

Steamed Custard: as baked custard, but cook in a steamer or pan of boiling water. The cooking time is about the same too.

Custard Tarts: pour a little pouring custard into each unbaked pastry case and bake in the oven for around 40-50 minutes. A little strawberry jam can be put in the base of the pastry case first, if desired.

Cheese is made from milk which has been naturally or artificially turned sour. Cheese possesses a high fat and protein mixture, but in melting, the fat often covers the protein and prevents the digestive juices reaching it in the stomach. Therefore, its digestion is delayed until the fat has been absorbed in the intestines. Cheese can be rendered more digestible by:

1] Adding to or combining with starchy foods. The starch will absorb the fat, not allowing it to cover the protein.

2] Using seasoning: Cayenne Pepper or mustard will irritate the intestinal lining, causing the release of extra digestive juices.

3] Cooking rapidly. This has the effect of preventing the protein from becoming tough and stringy and therefore, harder to digest. You could also add the cheese late to sauces.

4] Adding an alkali: for example, a generous pinch of Bicarbonate of Soda per 3 ozs (75g) will help neutralize the fatty acids and make the proteins easier to digest.

For smaller rooms, a 3.1 surround sound system might be sufficient, that is you leave out the rear speakers. For a larger room, you may want either a 6.1 or 7.1 system. The 6.1 has the rear row of speakers corresponding to the front row, while the 7.1 has an additional middle rear speaker.

It is better if you can buy all your speakers at the same time from the same manufacturer. Obviously, they all have to match each other and the amplifier. The output from the amplifier has to match the capabilities of the speakers or you risk blowing them. That is, sending them more power than they can cope with, which causes too much vibration and permanent damage to the speaker’s internal components. Everyone has heard blown speakers, they sound dreadful.

If you can not afford to get all your speakers at the same time, buy a famous brand and a late-ish model, so that you can get more of them when you can afford to. Do not go for end of line speakers, because they are discounted, unless you can buy all the speakers that you will ever need for your system.

Buy your speakers online, if that gets you the best deal, but you really ought to hear speakers like the ones you are buying in action, before you make up your mind. In 1609, Galileo invented the first artificial device for studying the stars and planets. It was the first astronomical telescope and through it he was able to observe things millions of miles away that no person had ever seen before. Because of the deductions he drew from his observations, he clashed with the Roman Catholic Church and was often in serious danger for his life, so radical were his discoveries.

But mankind was not to be put off, and since then we have gone on to build ever bigger and ever better astronomical telescopes with which we can even detect radio waves, microwaves, X-rays, infrared waves and gamma waves from outer space. Forty years ago, we even travelled to our Moon. and we have sent rockets to eight of the nine planets in our Solar System, as well as to several comets and asteroids.

Where will we go next? That decision was always up to the government of the United States and the old USSR, but now there are other players in the field. What will China or India want to explore with their possibly slightly different outlook on life? Or will it be just a question of financial benefit?

The world may be in a state of flux and power may be moving from its traditional seats in the West, but it has not lessened interest in questions that scientists think can only be answered in space. These are exciting times for the science of astronomy, but then man has always found astronomy exciting.
